Steven Goff is the Co/Owner and Executive Chef with Brinehaus Meat and Provisions, a Triangle based food truck and catering service, he is currently consulting in the Asheville area. Steven is responsible for day to day management of operations, marketing, menu design, business development and cooking classes.

He is former head butcher of Standard Foods in Raleigh North Carolina and former Executive Chef/Owner of the King James Public House in Asheville. Goff’s work has been mentioned in Food and Wine Magazine, Bon Appétit, Garden and Gun, as well as many local publications. Steven has worked in various aspects of the hospitality industry for over 20 years and holds degrees in Culinary Arts as well as Baking and Pastry.

Steven lives in Raleigh, North Carolina with his beautiful wife and business partner Samantha Goff, their bevy of animals and his daughter Emma Goff.

What’s the best piece of advice you’ve received from a fellow chef? 
When cooking, speaking, competing, or teaching set the tone and standard of who YOU are, what YOU stand for and what YOU believe in.  Don’t let other people or the media decide for you.  – Chef John Fleer

What are some of your favorite cooking trends happening right now? Nose to tail cooking/Sustainability.  The world will not last much longer if we don’t open our eyes and start paying attention to where things come from , what the TRUE cost of that is and make sure we utilize every inch of every piece of food we come in contact with.  Its our responsibility to respect the land that our food grows in, the lives that are given, and the work and sacrifice it takes to make every bite we eat. We are all connected and I feel it’s very important to recognize and appreciate that.

One kitchen tool you can’t live without:  Mandolin

What is your favorite dish to cook at home? My wife and I like to cook various rice bows.  They’re perfect because you can transform them into whatever your cravings are at the time! Some of the varieties include Pork Chops ‘N Gravy Bowl, NC Fish Poke With Coconut Sauce Bowl, Breakfast Bacon & Egg Bowl, Stir Fry Bowl, Veggie Rice Bowl (my wife’s favorite)

The Cooking With The Chefs Tent will be located at the corner of 4th and Evans Street, and will be open on Saturday, October 1st and Sunday, October 2nd.
